Aussies Are Doing Pavlova Boards This Christmas

Pavlova grazing boards are set to be on the menu this Christmas after Shalini Nestor, the founder of Swish Biscuits in Canberra, shared the enviable platter on her social media pages.

"I came up with the idea because I've seen DIY pavlova bars and stations before, but I hadn't seen it on a grazing board where the toppings are actually on the platter/table which makes it look really inviting and abundant," she told 7News.

"My family absolutely loved the idea and we had so much fun choosing how to decorate our own pavs; it was a really nice interactive way to serve dessert."

Nestor shared the creations with followers on social media, with many commenting they would be adding it to their Christmas menus.

"We had an early family Christmas today and I had to share my dessert idea! A pavlova grazing board," she said on the post.

"Little jars filled with passionfruit, nutella, homemade raspberry sauce, salted caramel and lemon curd.

"Lots of fruit, coconut, chocolate and fresh mint! Everyone gets to make their own custom pavs just the way they like it."

Revealing the recipe, Nestor said: "To make the meringue nests I whipped up 8 egg whites until thick and foamy then slowly beat in 1 1/2 cups caster sugar until thick and glossy.

"Mix together 1 1/2 tsp cornflour with 1 1/2 tsp apple cider vinegar and beat into the meringue. Draw 8cm circles on baking paper as a template (I had 12 circles split between two trays).

"Spoon on the meringue then bake in a slow oven at 120C for an hour; switch off and let them cool down with the oven door slightly ajar."

Sharing her tips on creating delicious-sounding toppings, Nestor added: "My personal favourite combination is fresh mango slices with passionfruit and a sprinkle of shredded coconut, but I also tried one that was topped with salted caramel sauce, raspberries and a sprinkle of Flake."
